As the days grow shorter and a warm pumpkin soup or a stew is served after a walk in the woods, it’s only right that dessert should have an autumnal flavour too. To mark the season, Carte D’Or is introducing its new Marone flavour to the Austrian catering industry. This ice cream with chestnut pieces adds a subtle nutty flavour to seasonal creations – from combinations with pear or chocolate to chestnut affogato.
For many, chestnuts are one of the delights of the cooler months
Carte D’Or is now bringing its distinctive flavour to professional kitchens in the form of ice cream. This allows catering establishments to add a seasonal touch to their dessert menus and offer guests the perfect way to round off an autumnal meal. “Chestnut is a flavour that deliberately sets itself apart from the mainstream, thereby specifically expanding the range. The slightly nutty note makes the new flavour the ideal choice for high-quality dessert creations and seasonal moments of indulgence in autumn”, says Rainer Kurz, ice cream consultant at Scooping, part of The Magnum Ice Cream Company.

From affogato to wild ham
The distinctive, delicate flavours of Marone pair well with chocolate, vanilla and pear. However, the new flavour can also be combined with savoury elements to create a dessert or even used in starters, for example with mildly smoked wild ham. “My current favourite is the chestnut affogato – hot espresso poured over a scoop of Carte D’Or Marone. It’s a brilliant drink and also serves as a little dessert with a special twist”, says Rainer Kurz.
A milk fat content of 7.5 per cent makes this variety beautifully creamy, whilst small pieces of chestnut add extra texture. Carte D’Or Marone is available for the out-of-home market in a pack containing two 2.4-litre tubs.
